HOW TO USE THIS COMPETENCY BASED LEARNING
MATERIAL
Welcome to the module in Bread and pastry Production NCII. This
module contains training materials and activities for you to complete.
The unit of competency "Perform Workplace Safety” contains knowledge,
skills and attitudes required for Bread and Pastry NCII.
You are required to go through a series of learning activities in order
to complete each learning outcome of the module. In each learning outcome
are Information Sheets, Self-Checks, Operation Sheets or Task Sheets.
Follow these activities on your own. If you have questions, don’t hesitate to
ask your facilitator for assistance.
The goal of this course is the development of practical skills. To gain
these skills, you must learn basic concepts and terminologies. For the most
part, you'll get this information from the Information Sheets and suggested
resources and references
This module is prepared to help you achieve the required competency, in
"Performing Workplace Safety ".
This will be the source of information for you to acquire knowledge
and skills in this particular competency independently and at your own
pace, with minimum supervision or help from your trainer.
Remember to:
 Work through all the information and complete the activities in each
section.
 Read information sheets and complete the self-check. Suggested
references are included to supplement the materials provided in this
module.
 Most probably your trainer will also be your supervisor or manager.
He/she is there to support you and show you the correct way to do
things.
 You will be given plenty of opportunity to ask questions and practice on
the job. Make sure you practice your new skills during regular work
shifts. This way you will improve both your speed and memory and also
your confidence.

Safety and security are not only practical components of a well-run workplace,
many aspects have legal requirements at state and federal levels. Depending on the
type of business and the regional location, you may be subject to a range of statutory
obligations for the health and the security of your workplace.

A safe work environment is a productive one. No matter the size or type of the
business, workplace safety procedures are a necessity for all staff. Safety measures
protect employees as well as equipment and business property. Avoiding or minimizing
injuries and damage to equipment and facilities will result in fewer expenses and more
profit for a business.

Hazard Identification

Identifying workplace safety issues is the first step in protecting employees.


Common work safety concerns can include ergonomics, presence of hazardous
chemicals, mechanical problems, noise pollution, restricted visibility, dangers of falling
and weather-related hazards. Issues with non-ergonomic equipment may cause human
health problems, including sore backs and carpal tunnel syndrome. Chemicals can
explode, causing burns, or pose the danger of poisoning. Mechanical safety issues can
occur related to the operation of any machine in the workplace. Noise and visibility
issues can compromise an employee’s hearing and sight. Falls resulting from poor
housekeeping or negligence can cause serious injury and death; procedures should be
in place to prevent them. Ice, snow and rain can create hazards of their own; employees
need to be trained how to operate equipment safely when weather conditions are bad.

Workplace Safety Policies

Each business should have a safety policy in place, created either by management or in
a joint effort between management and staff. Every employeehas a role in carrying out

the safety policies. A safety handbook should be created identifying safety issues and
spelling out consequences of not following the appropriate safety procedures.

Safety Training

Training is necessary so that employees will know how to practice safety in the
workplaces. Depending on the type of equipment used, the training may be required by
a federal mandate. For example, any workplace that operates a forklift must provide
training for employees for its safe operation. Training can come from outside experts
hired to teach classes or employees specially trained to perform safety instruction.

Equipment

Appropriate personal protective equipment (PPE) must be available to anyone who


comes in contact with a potential work hazard. This can include hard hats, protective
eyewear, earplugs, shoes, gloves and clothing. Even an office worker who delivers a
message to a work area near a potential hazard must put on the appropriate PPE.

Benefits

Workplace safety results in fewer accidents, which results in fewer costs for worker’s
compensation, less down time for employees, and less retraining time for workers
otherwise needed to replace an injured worker. Avoiding damage to equipment will
result in fewer repair costs. Worker performance is improved when workers know how
to prevent injuries and have confidence in management's active role in protecting their
safety.

IMPORTANCE OF SAFETY PROCEDURES

Keeping People Safe

Most employers would agree that preventing accidents and potential death to
employees is a natural priority. Most safety issues don't arise out of nefarious
intentions but come when businesses cut corners and don't take the time to train their
employees properly on safety protocols.

Injuries Cost Time and Money

The Occupational Health and Safety Administration estimates that employers pay
nearly $1 million each week in workers' compensation costs. Employers are required to
have workers' compensation insurance policies, but injuries increase the basic costs.
Also, if an employer is underinsured, the gap of coverage is the responsibility of the
employer.

Fewer Injuries Increase Productivity

Workplace injuries and unsafe working environments are bad for employee morale. An
employee who is concerned about being hurt isn't able to devote full attention to daily
work tasks. Employers who maintain a safe and healthy work environment and
conduct employee training on safety build a stronger relationship with employees.
Employees no longer feel like a means to an end but part of a team working together.
This creates loyalty and increases team morale, which has a direct correlation to
productivity.

1. Understand about emergency procedures.

An emergency is a serious, unexpected, often dangerous situation that requires


immediate action. The emergency procedure is a plan of actions to be conducted in a
certain order or manner, in response to an emergency event.
Nobody expects an emergency or disaster -- especially one that affects them, their
employees, and their business personally. Yet the simple truth is that emergencies and
disasters can strike anyone, anytime, and anywhere. You and your employees could be
forced to evacuate your company when you least expect it.
This booklet is designed to help you, the employer, plan for that possibility. The best
way to protect yourself, your workers, and your business is to expect the unexpected
and develop a well-thoughtout emergency action plan to guide you when immediate
action is necessary.
What is a workplace emergency?
A workplace emergency is an unforeseen situation that threatens your employees,
customers, or the public; disrupts or shuts down your operations; or causes physical
or environmental damage. Emergencies may be natural or manmade and include the
following:

 Floods,
 Hurricanes,
 Tornadoes,
 Fires,
 Toxic gas releases,
 Chemical spills,
 Radiological accidents,
 Explosions,
 Civil disturbances, and
 Workplace violence resulting in bodily harm and trauma.
 What is an emergency action plan?
 An emergency action plan covers designated actions employers and employees
must take to ensure employee safety from fire and other emergencies. Not all
employers are required to establish an emergency action plan. See the flowchart
on page 11 to determine if you are. Even if you are not specifically required to do

so, compiling an emergency action plan is a good way to protect yourself, your
employees, and your business during an emergency.
At a minimum, your emergency action plan must include the following:

 A preferred method for reporting fires and other emergencies;


 An evacuation policy and procedure;
 Emergency escape procedures and route assignments, such as floor plans,
workplace maps, and safe or refuge areas;
 Names, titles, departments, and telephone numbers of individuals both within
and outside your company to contact for additional information or explanation of
duties and responsibilities under the emergency plan;
 Procedures for employees who remain to perform or shut down critical plant
operations, operate fire extinguishers, or perform other essential services that
cannot be shut down for every emergency alarm before evacuating; and
 Rescue and medical duties for any workers designated to perform them.

What special equipment should you provide for emergencies?


Your employees may need personal protective equipment to evacuate during an
emergency. Personal protective equipment must be based on the potential hazards in
the workplace. Assess your workplace to determine potential hazards and the
appropriate controls and protective equipment for those hazards. Personal protective
equipment may include items such as the following:

 Safety glasses, goggles, or face shields for eye protection;


 Hard hats and safety shoes for head and foot protection;
 Proper respirators;
 Chemical suits, gloves, hoods, and boots for body protection from chemicals;
 Special body protection for abnormal environmental conditions such as extreme
temperatures; and
 Any other special equipment or warning devices necessary for hazards unique to
your worksite.

How to prevent workplace hazards


The best way to protect yourself and your employees from workplace
hazards is to identify and manage them and take reasonable steps to
prevent their potential to harm.

In order to control workplace hazards and eliminate or reduce the risk, you
should take the following steps:

Self-Esteem and Confidence
Self-esteem is not a static thing; it varies based on numerous factors,
different situations and the presence of different people, personal stress
levels and change.  Think about how you value yourself and learn to manage
the highs and lows of self-esteem, find ways of appearing more confident
even when you are not and learn some powerful techniques to boost your
self-esteem and learn about your personality.
Confidence is a measure of how well we think we may perform certain
roles or tasks. Linked to self-esteem, confidence is how we feel about our
ability.
Effective Speaking
Your voice says a lot about you and learning how to use it more effectively
has many benefits.  Our Effective Speaking page examines aspects of your
voice, accent, tone, pitch, volume and encourages you to learn more about
your voice and how you use it to its full potential.  Learn to communicate
more dynamically, fluently and with passion and enthusiasm.
Personal Appearance
The way you dress and take care of your general appearance are important
factors in personal presentation, what messages does the way you dress
send to others?  Your personal appearance also includes the body language,
gestures and other non-verbal messages that you use.  By being aware of
positive and negative non-verbal signals you can improve your image and
the way people perceive you.

Time Management:
If you don't manage your time wisely you are less likely to be able to get
everything done effectively. You are also more likely to be disorganised and
run late for meetings or other appointments. Poor time management has an
effect on how you are perceived by others. Learn some simple techniques to
help you improve your time management skills, get more done and avoid
being late.
