Tailwind offers a set of Dark Mode styles - https://tailwindcss.com/docs/dark-mode

These are not enabled by default due to file size considerations, but that should be less of an issue for this gem due to CSS preprocessor purging in production.

Related to #8, we'd need to add a configuration file to change the defaults - https://tailwindcss.com/docs/installation#customizing-your-configuration
